Let that beer rest!

Nov. 20 we brewed Northern brewers”Fixed gear American Red Ale”. We bottled it Dec 10. A week later we anxiously opened one. It was good, but tasted too young. We let it alone a couple more weeks, it had improved 10 fold. Yesterday was Fat Tuesday, which is what we named the beer for, oh my, it was awesome.!Allow yourself 3 months on those big beers, you will not be disappointed !
