Garlicy, IPA Potatoes

If you like garlic, give this a try.

2  lbs Yukon Gold Potatoes, quartered

1/4  C  IPA

1/4  tsp Brewer’s yeast

1  tsp chopped Parsley

I  head roasted garlic

2   Tablespoons Olive oil

To roast the garlic, cut 1/4 inch off the top, drizzle olive oil over the top and sprinkle with salt. Wrap in foil and bake at 350 degrees for an hour. The garlic becomes sweet. squeeze the garlic from it’s paper wrapper into a little bowl and add the 2 TBS Olive oil, then mash into a paste.

Boil the potatoes in salted water until a knife inserts easily. About 30 min. drain. Add the garlic paste, IPA, Brewer’s yeast and parsley. If they are too thick add a little more IPA until the consistency is right for you. Salt and Pepper to taste

Brewer’s yeast is a good source of essential fatty acids and B vitamins, it has a nutty, slightly cheesy flavor.
