Capping on foam

Professional breweries pop a shot of CO2 into the bottle right before capping. The CO2 displaces the oxygen. In home brewing, we fill the bottle to the point of run over. The head comes to the top, and is allowed to run over, till the head is gone. Then the cap is put in place. This procedure takes most of the oxygen out, as oxygen is not your friend in the bottle. Also, spend the extra pennies on oxygen-absorbing caps. No one we’ve ever talked to has been able to prove they work, but why take the chance?
