Tasting notes

Tasted after one week in the fermenter, we decided it need two oz. of Apollo and another week in ferment, this is not in the original recipe. Cleared amber color, thin lacy white head. Apollo nose evident, medium bitterness, very smooth finish. Rye not as prominent as expected, but noticeable in rounded out edges in flavor profile.
